Perhaps a sign that things are getting back to normal, my second loaf of bread this year. And it turned out quite well, despite a bit of a problem with the pan.
I’d put the dough together and it as finishing it’s first rise when Micha surprised me by telling me my favorite pan was no longer any good for baking. Apparently, the seams in the corners were coming apart. Not the best time for this to happen, so I tossed the dough in the fridge to slow it down, then went about my business until I could buy a new pan…which I did.
And the bread was among the best I’d made. And I know I should let it cool before digging in, but the peanut butter and honey was waiting, so…
